We live in the Midwest, Nebraska to be exact, and it snowed today.
It's November.
It's the Polar Vortex right on top of us.
It's sooo freaking cold outside today. I laid in bed for the longest time this morning, watching the news, hoping for that little bar that runs across the bottom of the TV to read "School Canceled".
No such luck.
After dragging myself out of bed, then dragging the kids out of bed and slipping and sliding our way to school - I knew exactly what we needed to have for supper tonight.
Potato Soup.
And bread.
I love potato soup. I love eating it at restaurants and I like it loaded up with cheese and bacon.
For a long time, I pretty much refused to try and make it myself.
Seemed WAY too hard. Too many steps.
Then a few years ago, I found this recipe in an old Taste of Home Magazine and decided that it looked easy enough and I gave it a shot.
This soup is BEYOND easy to make, you can everything cooked and on the table in about 30 minutes. And it's YUMMY! So good and cheesy and perfect.
This morning, when I got home - I threw the ingredients needed for bread into the bread machine and about 5pm this evening, I started on this soup.
By 6pm everyone was stuffed and warm and cozy and ready to cuddle up on the couch.

30 Minute Potato Soup
(from Taste of Home)
1/3 cup all purpose flour
3-4 cups of milk
3-4 large potatoes
1 cup of shredded cheddar cheese
1/2 cup sour cream
1 tsp garlic salt or seasoned salt
1/2 tsp pepper
1/2 tsp Cavender's Greek Seasoning
Additional Optional Toppings:
More Cheddar Cheese
Thinly Sliced Green Onions
Bacon (or Bacon Bits)
Clean and peel your potatoes. Chop into pieces a bit larger then bit sized. Boil in pot of water for 15-18 minutes. Drain, set aside.
In a large pan, whisk flour and milk until smooth. Bring to a boil and cook for about another two minutes until thickened. Stir in potatoes, one cup of cheese, sour cream and seasonings. Stir well over medium-high heat for 2-3 minutes. Keep stirring to prevent sticking to the bottom of the pan.
Serve warm in bowls and top with cheese, bacon and onions!
Tips:
* Make sure and season this dish!! Otherwise it will be completely bland.
* You can find Cavender's Greek Seasoning in most stores, I've been using it for years and love it on top of just about everything - even garlic bread!
* You'll also want to add salt to the water before you cook your potatoes.
