Our days are a little hectic around here. My husband is going back to school and currently has classes on Monday and Wednesday nights and all day Saturday and Sunday. He gets home from work on Mondays and Wednesdays at 4:30 and is usually wanting to eat before he has to go to class, which ends at 9:30. So I'm trying to find meals that can be easily put together and then re-heated for the kids and myself when we're ready to eat (about 6:30.)
Here's whats on the menu this week:
Monday - Chili (crock pot) and Cornbread
Tuesday - Biscuits and Gravy with eggs
Wednesday - Chicken Tacos (freezer meal), Rice, Refried Beans
Thursday - Pork Chops (freezer meal), Potatoes, Veggie
Friday - Angry Birds Pizza and Bread sticks
Saturday - Chicken Enchiladas, Spanish Rice, Veggie
Sunday - Dinner at my moms
Like most of you, I spend at least two hours a week pouring over Pinterest and I found the cutest Angry Birds Pizza! My oldest son, Ashton was walking by the computer and said "You have to make that mom!!!" So, I'm excited to have the boys help me make that this week!
For now, here's my chili. It's about the easiest chili you'd ever find. It also goes along with meatless Mondays for us.
Throw in a crock pot, two cans of beans and two cans of tomatoes. I use which ever type of beans are on sale or I have on hand. I always buy canned tomatoes when they're on sale (two weeks ago they were $0.50 a can plus my coupon of $0.40 off 3 - so I bought 30 of them.)
After that I toss in ketchup, garlic salt, cinnamon, dried onion, worchester and BBQ sauce. The only thing left out of this picture is salt, pepper and red pepper. Since the kids and I are wimps when it comes to spice, I only add a little bit now and let Chris (the hubs) add as much as he wants to his own bowl.
Give everything a good stir and set to high for 4 hours or low for 8.
Like I said, this is a simple chili, but it's good! The cinnamon adds a nice extra level of flavor in there. If it's not a meatless Monday for us, I usually add some fried ground turkey or hamburger.
I happen to be a snob about good cornbread, so I'll post my recipe for some of the sweetest, best-tasting cornbread tomorrow!
