Bakes Sale Treats - Chocolate Layer Cake in a Cup

My sons school has a yearly 'Open House'
this includes a raffle and bake sale

I always like to try and make something for the bake sale
This year, I loved what I cake up with!

Start with a box cake mix and make some cupcakes.


I let my cupcakes cool completely overnight.

The other supplies you'll need are

2 dozen paper cups (mine have footballs on them)
colored sprinkles
treat bags
ribbon
forks
white and chocolate frosting
chocolate chips



I started by putting one cupcake (without its wrapper)
at the bottom of each cup.


Then I started with the layers.



The first to go in is a dab of chocolate frosting on each one.



I hadn't originally thought of adding chocolate chips.
But I had half a bag in my pantry
and I thought they'd be a perfect addition!



I was right.
They were.



When topping everything off with the white frosting,
I did put on a Wilton tip.
I thought it gave everything a little bit fancier look.



And since we're in Husker country
(Nebraska)
Everyone here is crazy about Nebraska football..


So I added red sprinkles to each cup.


Aren't they pretty?




Then all the cups when into the treat bags.


My treat bags came with twist ties.
Here are some pictures showing how I attached the forks.




This made it alot easier when is came to attaching the ribbon!


I finished everything off with some red ribbon!
I LOVE the finished product!!!


These sold out at our bake sale for $2 a piece!


You could do this idea for anything.
Change the cup for whichever theme you're going after!


Add different colored sprinkles and ribbons for whichever team your rooting for.


This might be one of my favorite project to date!

Lunchbox Food: Kickin' Turkey Taco Rolls (Freezer Cooking)

Last week, I shared my Pizza Triangles
This week - it's Kickin' Turkey Taco Rolls

First I started with my pizza dough. I just added a 1/2 teaspoon of red pepper flakes to the dough.

1 lbs ground turkey
1 can diced tomatoes
1/2 cup frozen corn
1 envelope of taco seasoning

Brown the turkey and add the remaining ingredients. Let it cook together for about 5 minutes. Then add a heaping handful of Chedder Cheese into the mix. Stir well. My mixture still had alot of juice from the tomatoes in it, so I put the whole mixture into a strainer before spooning it onto the bread.

Roll out your dough, as we did in the Pizza Triangles and starting spooning your taco mixture onto the bread. 


Pinch them together - make sure the seams are tight and bake at 450 degrees for 12-15 minutes.

Let me cool completely and toss into a freezer bag.
These are great for busy mornings to throw into the lunch sack!

It's Back to School Time....What do I do now?

This will be my first year to have both kids in school.
Ashton is starting fourth grade and Colton will be preschool.

I'm torn in what I think about all of this.
I'm sad about it.
I'm happy for them, because they are both excited about school

I think the reason I'm sad is that I'm really a little scared.
I've been a stay-at-home mom for over 9 1/2 years.

Nine and a half years.

That is a long time.
Now, it's like I'm expected to all of a sudden go out and get a full time job and manage the house and the kids and do all the other stuff I do throughout the week.

Don't get me wrong - I know there are plenty of moms who work more then full time and do it all.
I just don't feel like I can be that person.
I don't think I would do a very good job at being a mom.

It all just seems very over-whelming to me
and caught up to me quickly.

How did Colton get to be old enough for Preschool?
That baffles me.

In reality, Colton is going half days, and will be home at noon...so the freedom will be short lived anyways.
I've thought about joining a gym or going back to school and finding a little part time job in the mornings.

I don't know.

I'm feel blank.

Any one else been there? Are you in this place now?
I'd love to hear another mothers thoughts.

Lunchbox Food: Pizza Triangles (Freezer Cooking)

School here starts in about 2 weeks So I'm in the process now of getting prepared. Part of me being prepared is making sure I have a good supply of school lunches on hand. Our kids take their lunches to school, and having more then just PB&Js everyday is something they really enjoy. This recipe is super easy and takes less then a half hour to make!

I use my bread machine to make this bread - you could easily use some refrigerated biscuits or frozen bread dough.

Pizza Dough (for bread machine)

1 cup water
2 TBSP vegetable oil
3 cups bread flour
1 tsp salt
1/2 tsp sugar
2 1/2 tsp active dry yeast

Put everything into the bread machine and turn to the "dough setting".

Additional ingredients needed:

Pizza Sauce
Pepperoni, Hamburger or Sausage
Mozzarella Cheese
Peppers, ect - add any pizza toppings you like!

After the dough is done, I roll is out as thin as I can and cut into triangles. Check out the pictures to see how to assemble these bad boys.

Lay them seam side down onto a greased cookie sheet. Poke three holes on the top of each one, to let the steam escape. Bake at 450 degrees for 12-15 minutes.

Let them cool completely. Toss into a freezer bag and into the freezer they go!

This makes about 10 Pizza Triangles for me. I make mine pretty big and usually one of them with some sides are enough for Ashton
The beauty of the Pizza Triangles in that you can put them into your kids lunch that morning and by the time they're ready to eat, it's defrosted and ready to eat.

You can also heat them in the oven in the morning, wrap in foil if the kids would prefer to eat them warm!

Back to School Must Haves - Eco Lunchboxes

My oldest son, Ashton, is getting ready to go into the fourth grade this year. For the first couple years that he was in school - we paid for and he ate hot lunch at school everyday. Then I happen to watch this documentary about school lunches. It talked about the sodium, fat, sugar and all the preservatives that are kids were putting into their bodies everyday just from school lunches. It talked about the amount of sugar that goes into a kids body over just one week from drinking chocolate milk at school each day.

I'm totally one of those moms. And freaked out.
We try to eat pretty healthy in our house.

After that, I started packing Ashton's lunch everyday.
He never seemed to mind.

I try to mix it up for him - sandwiches some days, wraps and every hot lunches about once a week.

The problem I've heard from some parents that either already pack lunches for their kids or want to. Is that they wonder about the number of plastic sandwiches baggies that are getting tossed everyday day.
